Cupcake Monday

Dr. Pepper and Cinnamon Cupcakes


Dr. Pepper cake:

1/2 c. cocoa
2 1/2 c. flour
1 c. sugar
1 c. brown sugar
1 tsp baking powder
1 tsp baking soda
1 c. butter
5 eggs
1 c. Dr. Pepper
1 tsp vanilla
1 tsp cinnamon

Preheat oven to 325 F

Add all dry ingredients together and set aside
Beat the butter, add sugars until fluffy. Add eggs one at a time.  Add vanilla
Alternate adding the dry ingredients and Dr. Pepper to the cream mixture.
Fill baking cups approx. 3/4 full.

Bake for 18 minutes or until toothpick comes out clean. Let cool in pan for 5 minutes then transfer to cooling tray.

Cinnamon Cream Cheese Frosting:

1 package (8 ounces) cream cheese
1/2 c. butter
2 c. powdered sugar
1 tsp vanilla
1 tsp cinnamon (or more depending on the strength you want)

Cream butter, cream cheese and vanilla together.
Slowly add the powdered sugar and cinnamon. If mixture is too thick add milk (1 tbsp at a time) until correct constancy is achieved.
